Bobotie/South African Meat Pie
Makes 6 to 8 servings.
INGREDIENTS:
3 slices white bread
1½ c milk, divided
2 Tablespoons olive oil
2 large onions, roughly chopped
1 Tablespoon curry powder
1 teaspoon dried oregano
1 teaspoon ground turmeric
2 cloves garlic, minced
1 pound ground beef
¼ cup mango chutney
1 tablespoon apricot jam
Zest and juice of 1 lemon
1 teaspoon tomato paste
Salt and black pepper, as needed
2 large eggs
2 bay leaves
INSTRUCTIONS:
1. Preheat the oven to 350
2. In a medium bowl soak the bread in 1 cup of the milk. Set aside.
3. Heat the oil in a large ovenproof skillet over medium heat. Add the onions and cook 2 to 3 minutes, until the onions are soft.
4. Add the curry powder, oregano, cumin, turmeric, and garlic. Stir and cook for 2 minutes.
5. Next, add the ground beef, breaking it into pieces with a wooden spoon. Cook the beef 7 to 10 minutes, until it has browned. Once the beef has browned, turn off the heat. Add the chutney, apricot jam, lemon zest, lemon juice and tomato paste. Season the mixture with the salt and black pepper.
6. Squeeze the milk from the bread, reserving the soaking milk. Tear the bread into pieces and add the pieces to the beef mixture.
7. Add the remaining ½ cup milk to the soaking milk. Add the eggs to the milk and whisk all together. Season the mixture with salt and black pepper.
8. Pour the milk mixture over the meat. Place the bay leaves on top.
9. Bake the bobotie, uncovered, for 30 to 40 minutes until it is golden brown.
